The sea urchin traded at Toyosu Market comes from Japanese locations such as Hokkaido and several prefectures in Tohoku, and from countries around the world including Russia, China, the USA, Canada, and Chile in South America.

Salted and Dried Fish Selling Area

Some seafood is salted and left to dry.

This can be shredded (in the case of squid) or used to make dashi stock. Dried whitebait and Japanese sand lance are also sold as a snack in their own right.

Fishery Products Selling Area

Toyosu Market sells various forms of processed seafood, including salted and semi-dried products (called "ai-mono" at the market), salted products such as pollock roe and salmon roe, fish paste products such as satsuma-age fish cakes, and eel kaba-yaki (eel broiled in soy-based sauce).
