Ise-Hikari is a rare breed of rice, the only one that remained standing when other rice stalks fell down in an Ise Shrine affiliated rice field after a typhoon. We use Ise-Hikari that is cultivated without using chemical fertilizers or agricultural chemicals by a farmer near Akiyoshidai, which is the largest karst plateau in Japan, a mere 20 minutes from our sake brewery with whom we have a contract for farming. Ise-Hikari is general-purpose rice, but it enables sake to be produced with ease and the sake made from Ise-Hikari tastes mild. The taste is rather simple, because this rice is not suitable for brewing sake, but the basic taste is a rice-based sweetness, which contributes richness and accent to the taste.

Brewer introduction
Chomonkyo is named after the scenic spot located on the upper reaches of the Abukuma River in northern Yamaguchi prefecture, which is famous for its beautiful canyon. Once Chomonkyo was brewed nearby, but we moved to the present place along the Abukuma River in 1970 because of dam construction. Yamada Nishiki and Saito-no-Shizuku, which are sake rice varieties representative of Yamaguchi Prefecture, give Chomonkyo consistency between a clear and light taste overall and contribute a delicious rice flavor. We also produce sake with rare Ise-Hikari, which is rice cultivated in a chemical-free environment and highly evaluated in organic markets across Japan. We also produce and ship liqueurs using bitter summer oranges (natsumikan), small citrus fruit (yuzu) and Japanese apricots.
