Hanakkori was born from saishin, a Chinese vegetable as the mother, and broccoli as the father. Hanakkori is a Yamaguchi prefecture original vegetable and newly created by the Yamaguchi Prefectural Agriculture & Forestry General Technology Center. The flower and stalk of hanakkori can be eaten and are soft, sweet and crispy. Compared with broccoli, hanakkori has a more subtle flavor and lighter taste. Hanakkori is readily eatable. Viewed from a nutritional perspective, hanakkori contains vitamin C at the same level as spinach, and also contains much dietary fiber.
The cooking method for hanakkori is simple. Just boil it lightly. After boiling, it becomes a vivid green and loses little color. It fits with Japanese, Western, Chinese and other cuisines as well as salads.
