We strive to make truly delicious mentaiko which is not only spicy but also rich and savory. With that very determination, our founder and his wife began their journey of taste exploration. They traveled all around trying out various ingredients, and finally succeeded in creating the 168 hour aging method and our original craft sauce.
08|Straining seasoning sauce
By slowly straining the marinating sauce that has not been absorbed by the pollack roes, we make a soft and popping texture.
09|Measuring weight
We measure the weight and pack the mentaiko.
10|Checking foreign materials
We use X-ray machines and metal detectors to check for foreign materials like metal fragments.
11|Packaging
We pack the mentaiko with paper and boxes.
The mentaiko is ready!
We conduct sensory tests to check flavor and color, bacteria tests for safety, and physicochemical tests, and deliver only the products which have passed all these tests.
