Ninben was established in Genroku 12 (1699) during the Edo period. Everything began by setting up two side-by-side stalls and starting a katsuobushi and shioboshi (salted and dried fish) business. Following this, in the first year of the Hoei period (1704), a katsuobushi wholesale business under the name of Iseya Ihee was started in Kobunacho. In Kyoho 5 (1720), a retail store for katsuobushi was set up in Setomoncho in Nihonbashi (currently, Muromachi nichome).

300 years have passed since then and the store has transformed over the course of the Meiji, Taisho, Showa and Heisei periods. On October 28, 2010, a new store was set up in COREDO Muromachi 1 located in Nihonbashi-Muromachi. Since then, it has been favored by all of our customers as a place to discover genuinely good tasting dashi.

Nihonbashi, Tokyo, is the origin of Ninben. At Ninben, their aim is to pass down katsuobushi to the future generations, as well as to spread the deliciousness of dashi around the world. At the main store in Nihonbashi, hongare katsuobushi shaving demonstrations are performed. They have also set up their so-called Nihonbashi Dashi bar, based on the concept of one soup for every meal.
